One of the Gold Award winners announced in April 2017 at the New York International Olive Oil Competition (NYIOOC) was a robust Šoltanka, made from an indigenous olive variety also known as Levantinka that grows on the Croatian island of Šolta. This price winner happened to be a joint entry to the competition submitted by an association of olive oil producers from this rocky Adriatic island located in the central Dalmatian archipelago.
WHERE IS OLIVE OIL OF ŠOLTA PRODUCED?
The area of production of “Olive Oil of Šolta” is limited to the island of Šolta and the islets in front of Maslinica. Šolta is a small, inhabited island in central Dalmatia. It is not certain even nowadays whether the Greeks or the Romans brought the olive tree to Šolta, or they had found it here cultivated it and distributed it around the Mediterranean.
HOW IS OLIVE OIL OF ŠOLTA PRODUCED?
It is produced from olives which immediately after harvest are transferred to the oil mill and processed into oil. These olives are picked from the streaked trees where the fruit matured 1/3 and 1/3 is still yellow green. Even nowadays, the olive groves are cultivated manually or by small traditional tools. Manual harvesting prevents damaging of the olive fruits, and it enables the selection of the fruits from the very olive grove. Only healthy and the best quality fruits are collected for production of olive oil of Šolta in order to ensure uniform high quality oil.
HOW DOES OLIVE OIL OF ŠOLTA DIFFER FROM OTHER OLIVE OIL?
The specificity and quality “Olive Oil of Šolta” arises primarily from a large share of the variety Šoltanka (Levantinka) that should be between 50 and 100%. Nowhere in the world does this variety grow in such percentage as on the island of Šolta. The rest is sort Oblica that also gives special taste to Dalmatian oils. Climate of Šolta with hot and dry summers, exposure to northern wind Bura, minerals in limestone, and the special composition of the soil and ora together form this superior kind of product, and give it its unique character.
